Day 2 - roasted capsicum

Roasted capsicums are such a great thing to have, you can add them to anything...the red and yellow ones are soooo lovely and sweet...Again this can be done a few days ahead, storing them in an airtight container, or you can slice them up and put them in a glass jar covered with olive oil

Ingredients

large red capsicum

How to...

place capsicum under a hot grill and let it char on one side, then turn over...do this until the whole capsicum is looking burnt

once capsicum is charred, place it in a container with lid, or plastic bag to sweat and then you can remove the peel

now is is ready to slice

what you don't use, or if preparing in advance, can be stored in glass jar with olive oil
