Day 4 - chicken soup

Here is where you can prepare ahead of time and get a meal out of it at the same time...this is another favourite of mine, which most Chileans tend to do for parties...it's a chicken paste that you can use to make canapes, or you can use it as a dip with sliced up carrots, celery or corn chips, crackers...But...first we need to boil the chicken first...if you can use a whole chicken great..if not use drumsticks and wings...because you'll get all of the lovely glutamine and collagen which is great for healing the digestive system and all of your connective tissues..including your skin.

Ingredients

8 chicken drumsticks

1-2 carrots, depending on size

1 onion

2-3 cloves of garlic

1 tsp salt

1 tsp oregano

1/2 red capsicum

1-3 Tbsp mayonnaise

How to....

  • slice up the onions, carrots and crush the garlic. The capsicum cut it up into 2-3 large pieces. It'll make it easier to remove the skin once cooked

  • put the chicken, with the vegetables into a large pot of water and cover. letting come to the boil.

  • reduce the heat and let it simmer for about 1hrs, until chicken is cooked.

  • Once the chicken is boiled, remove the chicken , along with 1 piece of capsicum and leave to cool in a bowl.

  • Here you can use the cooking liquid to make a lovely chicken broth egg and noodle soup, while you wait for the chicken to cool.

  • When the chicken is boiled, remove the flesh from the bones, along with the skin and place the meat in a bowl. The amount on chicken meat that you'll need will depend on how much you want to make.

  • remove the skin from the cooled cooked capsicum and add to the chicken.

  • To the chicken and the peeled capsicum and 1-2Tbsp of mayonnaise to begin with

  • Next you have to blend the chicken, capsicum and mayonnaise to make a paste. this can be done with a Bamix, blender or food processor. Blend until you have a nice creamy consistency, adding more mayonnaise if needed

Your paste is ready to use, spread on crackers, bread, or use as a dip. Store in an air tight container. It will last min 2 weeks, if it doesn't get eaten before then!!
